Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 cups water or broth for more flavor
  • 1 English cucumber, diced
  • 1 bell pepper, diced
  • 1 medium tomato, chopped
  • 1/4 cup sliced black olives
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh herb leaves, chopped (parsley, cilantro, parsley or mint)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon SOULFUL SEASONING SALT
  • 1 teaspoon G.O.A.T SEASONING BLEND
  • 1 teaspoon RANCH SEASONING BLEND

Instructions

  1. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, cover, reduce heat and simmer for 15 minutes or until all the liquid is absorbed. Remove from the heat and let it sit covered for another 10 minutes. Fluff with a fork and set aside. Bring to a boil, cover, reduce the heat, and simmer for 15 minutes or until the water or broth is absorbed. 
  2. In a large mixing bowl, combine the cooked quinoa, diced cucumber, bell pepper, tomato, olives,  parsley, feta cheese, and fresh herbs of choice.
  3. In a small bowl, whisk together the olive oil, lemon juice, SOULFUL SEASONING SALT, G.O.A.T SPICE BLEND and RANCH SEASONING BLEND. Pour the dressing over the quinoa mixture and toss until well combined.
  4. Serve chilled or at room temperature.

Notes

  • Feel free to customize this salad by adding other vegetables or ingredients such as red onion, avocado, or grilled chicken.
  • Make a larger batch and store it in the refrigerator for quick and easy lunches throughout the week.
  • As always, adjust the Spice Blends according to your taste preferences.
