Serves: 4
Ingredients- Strawberry Balsamic Vinaigrette Dressing:
2 tablespoons balsamic vinegar
5 tablespoons olive oil
2 tablespoons honey
1 teaspoon Dijon mustard
5 large strawberries, hulled and sliced (can substitute with defrosted frozen strawberries)
½ teaspoon salt
1/8 teaspoon black pepper
To make the dressing, add all of the ingredients to a food processor or blender and blend until smooth. Add more salt and pepper to taste if needed. Set aside.
Ingredients: Apple Pecan & Feta Salad:
6 cups mixed greens
2 green apples
1 cup pecans, roughly chopped and toasted
¼ cup cranberries
1/3 cup feta cheese
Lemon wedge
Steps:
1. Core and slice the apples into 1 inch slices. Squeeze on the lemon juice to prevent browning
2. To toast the pecans, heat a sauté pan on medium high heat. Add the pecans and cook for 5-7 minutes. Stir periodically to make sure they toast on both sides and don’t burn. Remove from heat
3. In a large bowl, add the mixed greens, apples, cranberries, feta and toasted pecans
4. Drizzle on some of the vinaigrette, toss and serve
