Stewed Chicken & Gravy
There’s nothing like a pot of stewed chicken and gravy to bring warmth and comfort to the table. This recipe gives you all the rich, soulful flavor you crave—prepared in a healthier way using Laila Ali Spice Blends. It’s a dish that feels like tradition but supports the way you want to eat today. Whether you’re serving it on a relaxed weeknight or as part of a special Sunday dinner, this recipe delivers comfort, nourishment, and flavor in every bite.
Ingredients
- 6–8 skinless chicken thighs
- 3 teaspoons SOULFUL SEASONING SALT, divided
- 2 teaspoons paprika
- 1 tablespoon SASSY SEASONING BLEND
- 1/2 teaspoon SPICY PEPPER BLEND
- 2 teaspoons GARLIC GODDESS BLEND
- 1/4 cup olive oil
- 1 medium yellow onion, diced
- 1 stalk of green onion, diced
- 2 teaspoons finely chopped fresh garlic (optional)
- 2 teaspoons chopped fresh thyme (optional)
- 2 bay leaves
- 4 cups low-sodium chicken broth + 1 cup water
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Season the Chicken. Place the chicken thighs in a large bowl. Add 2 teaspoons Soulful Seasoning Salt and paprika. Toss to coat the chicken evenly and set aside.
- Sauté the Aromatics. Heat olive oil in a large sauté pan or Dutch oven over medium-low heat. Add the yellow onion, green onion, and finely chopped garlic (if using). Sauté for 5–7 minutes, until softened and golden. Remove from the pan and set aside.
- Brown the Chicken. Raise the heat to medium-high. Add the seasoned chicken thighs to the pan and brown for 4–5 minutes per side until lightly golden.
- Simmer the Stew. Return the sautéed veggies to the pan. Add thyme (if using) and bay leaves, then pour in the chicken broth and water. Stir in the Sassy Seasoning Blend, Spicy Pepper Blend, remaining 1 teaspoon Soulful Seasoning Salt, and Garlic Goddess Blend. Bring to a boil, then reduce heat and simmer uncovered for 35–40 minutes, or until the chicken is tender and fully cooked.
- Thicken the Gravy. Mix the cornstarch and water to make a slurry. Slowly stir it into the pan and let it simmer for 2–3 minutes until the gravy thickens. Taste and adjust seasoning as needed.
- Serve. Garnish with chopped parsley and serve hot over rice, mashed potatoes, or your favorite side.
Notes
- This recipe is easy to double for meal prep or larger families, and you can swap in your favorite chicken parts—like drumsticks or bone-in thighs—for even more flavor.
- Want to add more depth? Celery and green bell peppers make a great addition. Just toss them in when sautéing the onions.
- If you prefer a thicker gravy, add a little more cornstarch slurry until it reaches your desired consistency.
- This dish also makes an excellent make-ahead meal—the flavor gets even better the next day.
