These bold and satisfying vegan tacos are packed with protein-rich lentils, sautéed vegetables, and just the right amount of smoky warmth from perfectly balanced seasonings. The hearty texture comes from a mix of tender lentils, bell peppers, and optional eggplant and walnuts, while my Perfect Taco Blend brings the bold flavor that makes this recipe shine. It’s a wholesome, plant-powered take on taco night that delivers big on taste with simple ingredients.

Ingredients

  • 2 cups cooked brown or green lentils (from about 1 cup dry)
  • 12 tablespoons olive oil
  • 1 medium yellow or white onion, finely chopped
  • 1 red or yellow bell pepper, diced
  • 2 teaspoons GARLIC GODDESS BLEND or 2 cloves garlic, minced
  • 1/2 to 3/4 cup vegetable broth, as needed
  • Optional: 1 cup diced eggplant (peeled if preferred)
  • Optional: 1/2 cup chopped walnuts (can be raw or lightly toasted)
  • 1 tablespoon PERFECT TACO SEASONING BLEND
  • 1 teaspoon SOULFUL SEASONING SALT

Corn or flour tortillas, for serving

  • 8 to 10 small corn or flour tortillas
  • Taco toppings: shredded lettuce, guacamole, diced tomato, vegan sour cream, etc.

Instructions

  1. In a skillet over medium heat, heat 1–2 tablespoons olive oil and sauté the onion and bell pepper until softened, about 5 minutes.
  2. Add the Garlic Goddess Blend (or minced garlic) and cook another minute until fragrant.
  3. If using eggplant, stir it in now and sauté until tender, about 5–7 minutes. Add a splash more broth if needed.
  4. Add the cooked lentils, Perfect Taco Blend, and ½ cup vegetable broth (adding more as needed). Stir to combine.
  5. Stir in walnuts if using, then add Soulful Seasoning Salt. Simmer for 5–7 minutes, allowing the flavors to meld and any excess liquid to reduce.
  6. Taste and adjust seasonings as needed.
  7. Warm tortillas and fill with the taco mixture. Add your favorite toppings and enjoy!

Notes

Take It Up a Notch:

  • Sprinkle chopped walnuts with a pinch of Perfect Taco Blend, spray lightly with avocado or olive oil, and toast in the oven at 350°F for 5–7 minutes, or until golden and fragrant. Let cool, then sprinkle on top of the tacos just before serving.
  • Garnish with fresh cilantro and a squeeze of lime juice just before serving to add brightness and a burst of fresh flavor.
