I’ve always been a fan of Thai food. Whenever my family gets Thai takeout, I call in the order.  My husband Curtis always asks for Crab fried rice (with extra crab) to go along with whatever I decide to choose off of the menu for the family. I’ve been making Chinese style fried rice for years, so I figured I would give Thai fried rice a try since Curtis loves it so much. The crab meat is the star of the recipe, so I go light on the amount of fish sauce, soy sauce, sesame oil and Laila Ali Spice Blends used to flavor the dish. Fresh cilantro, scallions and lime juice add a pop of brightness to finish off the recipe. Also, cilantro has a ton of health benefits such as helping the body flush out heavy metals, protects against oxidative stress, lowers blood sugar and reduces anxiety. So I grow cilantro in my home garden and use it as much as possible. Back to the rice…unexpectedly, the first time I made my Thai inspired fried rice, it got my husbands stamp of approval! Tip: If you like the subtle sweetness of traditional Thai fried rice, you can add a teaspoon of raw sugar (or a sugar substitute) to my recipe by stirring it into the soy sauce before adding it to the pan. 

Ingredients

  • 2 cups Cooked Fried Rice (Day Old)
  • 2 Tbsp Cooking Oil
  • 23 Eggs (Beaten )
  • 1 Tbsp Fish Sauce
  • 1 Tbsp Soy Sauce
  • 1 Tsp Sassy Seasoning Blend
  • 1 Tbsp Garlic Goddess Seasoning Blend
  • 12 8oz Container of Premium Lump Crab
  • 4 Green Onions (Chopped )
  • 2 Tbsp Cilantro (Chopped)
  • 1 Lime (For Garnish)
  • 1 Tsp Fresh Lime Juice
  • 1 Tsp Sesame Oil
  • Soulful Seasoning Salt (To Taste (Optional))

Instructions

  1. Heat oil in a pan or wok over medium heat.
  2. Add the rice and cook, tossing it a couple times for 2-3 minutes, allowing it to toast slightly.
  3. Stir in the eggs and coat the rice.
  4. Continue tossing, until the eggs are halfway cooked.
  5. Add the fish sauce, soy source, Sassy Seasoning and Garlic Goddess then continue tossing the rice until all ingredients are well blended.
  6. Increase the heat to high and gently fold in the crab meat.
  7. Continue cooking 3-5 minutes until the crab is heated through.
  8. Add the green onion, cilantro, sesame oil and lime juice.
  9. Toss and cook 1-2 minutes. Remove from the heat.
  10. Garnish with lime wedges, sprinkle on the Soulful Seasoning Salt and serve hot.
