Citrus Herb Salmon with Avocado & Mango Salsa

This delightful dish combines the succulence of salmon with the vibrant flavors of my NEW Citrus N’ Herb Spice Blend and a refreshing Avocado Mango Salsa, creating a culinary experience that will transport you to the sunny shores of the Caribbean! The combination of zesty citrus notes and aromatic herbs adds a burst of flavor to the tender salmon, truly making it a delightful dish.

Salmon Ingredients:

  • 4 salmon fillets
  • 2 teaspoons Citrus n’ Herb Seasoning Blend
  • 1 teaspoon Soulful Seasoning Salt
  • 1/2 teaspoon Spicy Pepper Blend
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 lemon, thinly sliced

Avocado Mango Salsa Ingredients:

  • 1 mango, diced
  • 1 jalapeno, diced
  • 1/4 cup black beans
  • 1/4 cup sweet corn
  • 1 green onion, diced
  • 1 garlic clove, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Citrus n’ Herb Seasoning Blend
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon Spicy Pepper Blend
  • 2 tablespoons cilantro, chopped
  • 2 avocados, cut into wedges

Instructions

  1. Add the salmon to a large ziplock bag. In a small bowl, combine the Citrus n’ Herb Seasoning, Soulful Seasoning Salt, Spicy Pepper Blend, olive oil, and lemon juice and stir. Add the marinade to the bag, zip it closed and massage the marinade into the salmon. Put the salmon in the fridge for about 30 minutes. 
  2. Preheat the oven to 375 degrees.  Line the sheet pan with parchment paper. Arrange the lemon slices in the middle of the pan and place the salmon fillets on top of them. 
  3. Roast in the oven for 15-20 minutes or until the salmon is cooked through to your liking. 
  4. Meanwhile, make the salsa. Combine all ingredients for the Avocado Mango Salsa, except the avocado, into a large mixing bowl and toss to combine. Adjust the seasoning as needed and set aside until ready to serve. 
  5. When the salmon is ready, transfer to a plate and top with the salsa. Serve immediately, garnished with the avocado wedges and lemon slices.

Notes

This recipe offers versatility in terms of serving options. For those following a low-carb diet, you can enjoy this dish as is, or with either steamed vegetables or on a bed of fresh salad greens. Alternatively, you can pair it with steamed rice or potatoes for a heartier meal.
