Ingredients

Roasted Carrots:

  • 2 pounds carrots, peeled
  • 2 tablespoons olive oil
  • SOULFUL SEASONING SALT ADD TO CART, to taste
  • SPICY PEPPER SEASONING BLEND ADD TO CART, to taste
  • 1 tablespoon honey or maple syrup, optional, for drizzling

Whipped Feta:

  • 8 ounces block feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons CITRUS N’ HERB SEASONING BLEND ADD TO CART
  • 1 teaspoon GARLIC GODDESS SEASONING BLEND ADD TO CART or 1 garlic clove
  • Salt, optional, to taste

To Serve:

  • 1/2 cup chopped pistachios
  • Fresh herbs (parsley or mint)
  • Extra honey or maple syrup, optional
  • Extra SPICY PEPPER SEASONING BLEND ADD TO CART optional

Instructions

  1. Heat the oven to 425°F.
  2. Place the peeled carrots on a baking sheet. Drizzle with olive oil and sprinkle on Soulful Seasoning Salt and Spicy Pepper Seasoning Blend to taste. Toss well and spread into a single layer.
  3. Roast for 25–35 minutes, turning once, until tender and caramelized. If desired, drizzle lightly with honey or maple syrup while hot.
  4. Add the feta, Greek yogurt, olive oil, lemon juice, Citrus N’ Herb Seasoning Blend, and Garlic Goddess Seasoning Blend (or garlic clove) to a food processor. Blend until smooth. Add salt only if needed.
  5. Spread the whipped feta on a serving platter. Arrange the roasted carrots on top. Sprinkle with chopped pistachios and fresh herbs. Drizzle with honey or maple syrup, if desired.
