Grill Pan Method:
- Preheat a grill pan over medium-high heat. In a bowl, combine chicken breasts, RANCH SEASONING BLEND , SPICY PEPPER BLEND and SOULFUL SEASONING SALT. Rub the spices in to the chicken.
- Brush the grill pan with olive oil. Grill the chicken for 5-6 minutes per side, or until cooked through. Let rest before slicing thinly.
Oven Method:
- Preheat the oven to 400°F (200°C). In a bowl, combine chicken breasts, RANCH SEASONING BLEND, SPICY PEPPER BLEND and SOULFUL SEASONING SALT. Rub the spices into the chicken.
- Line a baking sheet with parchment paper. Place the chicken on the baking sheet and brush with olive oil. Bake for 15-20 minutes, or until cooked through. Let rest before slicing thinly.
Salad Assembly:
- In a large bowl, combine salad greens, cherry tomatoes, corn, diced avocado, grated cheddar cheese, grated carrots, and sliced grilled chicken.
- Drizzle the Homemade Ranch Dressing and barbecue sauce (if using) over the salad. Garnish with fresh chives or cilantro leaves.
Homemade Ranch Dressing Recipe:
- 1/2 cup Greek yogurt
- 1 tablespoon vinegar (apple cider or white wine)
- 1 tablespoon RANCH SEASONING BLEND
- 1/2 teaspoon SPICY PEPPER BLEND
- 1 teaspoon SOULFUL SEASONING SALT
- 1-2 tablespoons olive oil
Whisk all the ingredients together until smooth, and adjust the seasoning to taste.
