Barbecue Chicken Salad with Ranch Dressing

A flavorful and refreshing twist on a classic! Tender grilled chicken, seasoned with our signature Spice Blends, is paired with crisp salad greens, sweet cherry tomatoes, fresh corn, creamy avocado, and tangy cheddar cheese. Drizzled with our creamy Homemade Ranch Dressing and a hint of smoky barbecue sauce, this salad is satisfying and delicious.

Ingredients

  • 1 lb. Skinless chicken breast 3-4 medium breasts)
  • 2 tablespoons SPICED BBQ SEASONING BLEND
  • 2 teaspoons SOULFUL SEASONING SALT
  • 2 teaspoons RANCH SEASONING BLEND
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 68 cups Romain salad greens
  • 1 cup fresh grilled corn kernels (or 1 cup frozen corn kernels, thawed)
  • 1 large avocado, diced
  • 1 cup grated cheddar cheese
  • 1 cup grated carrots
  • 1/2 cup barbecue sauce (optional)
  • Fresh chives or cilantro leaves for garnish

Instructions

Grill Pan Method:

  1. Preheat a grill pan over medium-high heat. In a bowl, combine chicken breasts,  RANCH SEASONING BLEND , SPICY PEPPER BLEND and SOULFUL SEASONING SALT. Rub the spices in to the chicken.
  2. Brush the grill pan with olive oil. Grill the chicken for 5-6 minutes per side, or until cooked through. Let rest before slicing thinly.

Oven Method:

  1. Preheat the oven to 400°F (200°C). In a bowl, combine chicken breasts, RANCH SEASONING BLEND, SPICY PEPPER BLEND and SOULFUL SEASONING SALT. Rub the spices into the chicken.
  2. Line a baking sheet with parchment paper. Place the chicken on the baking sheet and brush with olive oil. Bake for 15-20 minutes, or until cooked through. Let rest before slicing thinly.

Salad Assembly:

  1. In a large bowl, combine salad greens, cherry tomatoes, corn, diced avocado, grated cheddar cheese, grated carrots, and sliced grilled chicken.
  2. Drizzle the Homemade Ranch Dressing and barbecue sauce (if using) over the salad. Garnish with fresh chives or cilantro leaves.

 

Homemade Ranch Dressing Recipe:

  • 1/2 cup Greek yogurt
  • 1 tablespoon vinegar (apple cider or white wine)
  • 1 tablespoon RANCH SEASONING BLEND 
  • 1/2 teaspoon SPICY PEPPER BLEND
  • 1 teaspoon SOULFUL SEASONING SALT
  • 1-2 tablespoons olive oil

Whisk all the ingredients together until smooth, and adjust the seasoning to taste.

Notes

  • For extra tender chicken breasts, soak them in a saltwater brine before cooking! Simply dissolve 1-2 tablespoons of salt in 1 quart of water, then add the chicken breasts and refrigerate for 30 minutes to an hour. This helps to tenderize the meat and add flavor. Pat dry with paper towels before cooking as instructed.
  • Customize the salad with your favorite toppings such as shredded cheese, sliced jalapeños, diced red onion, crispy bacon or fresh chopped herbs.
  • If you prefer a vegetarian option, you can substitute the chicken with tofu or extra vegetables such as mushrooms and zucchini.
